eSIM vs. Physical SIM and making calls, using Zoom, Slack, etc.

Hello! We're so excited to come live in Costa Rica for a few months.

I'll be working remotely and will need to be able to make calls or jump on a Zoom call at any time, possibly at times where we will not be around Wifi.

What is the best option for me? I like the ease of an eSIM (not having to reload at a store) but it sounds like I may not be able to make calls or receive texts to my phone number? Maybe a dumb question, but will I be able to make and receive calls on wifi and use my same number?

What is the best option to keep everything similar to US service without having to provide a new phone number to my contacts, which is what sounds like happens when using a physical SIM.
