Concerning General Living Costs

With the growing instability and uncertainty in the U.S., we had made plans to relocate/retire in Panama, however more recently have learned that serious crime along with increased living costs would seem to make that a matter of concern for us both.
While the various opinions vary wildly on the blogs concerning the pro's and con's of any given locale, I would most deeply appreciate hearing from anyone about how realistic it is to consider that two people could live a very simple, modest, quiet, and safe life in Nicaragua?
Aside from the fact I have heard electricity costs are virtually insane, the warmth and friendly nature of the people sounds fantastic, as does the very minimal violent crime rate of the country. Would approximately U.S. $1,200.00 each month be nearly sufficient, or is this altogether unrealistic to expect?
Suggestions and/or insight would be very much welcome with regards to the best locations to consider, along with any appropriate related details and information. We want to make this change ASAP at this point, but with limited funds cannot afford judgement errors, hence this request for insight. My sincere and heart felt thanks to all.
