Ready to make it happen!

Hi guys, I am planning on moving to Italy (Rome) next year - May of 2019 with my partner. We will both be relocating from Chicago..
We are both American citizens but I was born in Poland and still have a Polish passport so I guess dual-citizenship.
Our plan is to move for 6-12 months and go there with our savings in hopes to pick up some work along the way to make some money to not burn through all of the savings. I understand we might need a Schengen Visa / insurance etc. but I noticed that one of the requirements for the Schengen visa is return flight and accommodations for the whole stay in Italy. Since we are unsure of how long we will be there or where we will be living the whole time, how do we bypass this requirement? Are there other things I should know when planning this move? Any help would be greatly appreciated!
