How to know which medications are available via in CR without a local prescription.

How do we determine which meds are available at the pharmacy with a current bottle or prescription and which you must see a doctor first? Should I plan to try to make an appointment prior to moving or is it easy to see one once in country.

It seems that our state only allows 30 days of medication even for vacations.

Are there mail order companies that are used that will mail from the US?

No, unless you have received a permit for your meds. or vitamins, you can't can't have them 'sent in.'
You will have to get a permit for every Rx and for every time you import the Rx. You may be able to purchase what you are looking for at a local pharmacy.
To get a prescription in CR, you may have have to see a local doctor, and then purchase them over the counter.

Not all pharmacies offer the same meds.

You can check this link for one of the larger pharmacies in CR (Fischel):
https://www.fischelenlinea.com/

Go to "Productos" and select a medical condition. (You can use something like Google Translate to translate pages to English.)

Most medications are "over the counter" (no prescription required), except for opiods. If you bring your USA prescription info to the pharmacy, they should be able to assist you - but you may need to accept generic meds vs brand name.
