Queso Fresco is a creamy, soft, and mild unaged white cheese made from a combination of cow's and goat's milk. It is similar to (if slightly more acidic than) pot cheese and farmer cheese. It has also been compared to Indian paneer and to a mild feta, and is considered one of the easier cheeses to make, as it requires no careful handling and does not call for rennet or a bacterial culture. If you are lucky, you will have a "cheese" truck that comes through your town and sells this delicious fresh cheese each day -- and you need to buy it daily as it lasts a short time. Used in recipes, in soups and sauces, served on salads, and served in the morning with fresh bread for breakfast, it is a very special taste of Ecuador.
