Where to get the best cottage cheese anywhere in the country of Ecuador (Disclaimer: Though perhaps not the Oriente)

I have been living in Ecuador now for over 7 years and yet I still experience wonderful new joys...

Some are incredible, some beautiful, some life changing...

this one that I discovered today was ...:::::AWESOME:::::.....

One of the foods you miss when you move to Ecuador is cottage cheese -- it almost doesn't exist -- same with sour cream. Well not in the plastic container that says Breakstone ...(you have to be from New York to get it...)

It is a huge announcement in Cuenca when someone discovers these products can be found in the supermarket -- and only recently can you buy small amounts of this stuff.

Now I was never a big fan and there was only one thing I liked from time to time. I happened to have a craving for -- noodles and cottage cheese.

And I wnt back and reread something that had crossed my screen who knows when -- about curds and whey ...curds being cottage cheese ...and then about our local queso fresco -- and realized -- it's just pressed dried curds.

I had some queso fresco -- from the evil empanadas -- so I broke up the queso into a bowl, added some whole milk, stirred it a little and put into the fridge for an hour.

I don;t often buy this type of cheese -- it was always a bit too -- salty and acidy for my taste -- but I would have it around now and then. I had used ricotta in my empanadas before -- when queso fresco is the actual recipe -- so that also played into the "experiment".

This was ... the best cottage cheese I ever had...

The way I make sour cream is also so easy and you realized it is available in every mercado's tienda.

Buy a bag of crema de leche, cut it open and pour it out in a glass/pyrex bowl. Squeeze quarter to 1/2 a lime into the cream while continually stirring to keep from curdling. and store it in the fridge.

Be sure to bring down a few empty cottage cheese and sour cream containers from your favorite brands and keep refilling them -- so when snoops come to your house they have something really -- cheesy -- to gossip about!
