moving with children and grandchildren

I hope to move to the Cotacachi area with my son and two grandchildren in the next 2-3 years. The kids are 7 and 8 right now, I am helping to raise them. I have a total income from a pension and social security of 3800 a month. I would like to rent a small home with area for garden, chickens etc. The kids are excited and already learning Spanish, my granddaughter wants a farm, impossibly expensive in the us unless you want to live in snow in the winter. I visited for 2 weeks in 2003, spent time in Quito and traveled to Cotacachi and Otavalo. I was raised on a farm, I camp and I am very accepting of other cultures, in fact that is a big reason I want to move there. If I had my way and didn't have the responsibility of the grandkids, I would spend several years in many different Latin American countries, just for the experience of the culture. Any suggestions to help me prepare us all. Schools etc for the kids, I don't want to shortchange them if they want to further their education or eventually return to the us.
