Quito Restaurants - Authentic Ecuadoran Cuisine

I'm going to be staying in Quito for three months, and I want to fully experience the local food that always looks so delicious on TV. I really want to try a place Tony Bourdain seemed to enjoy called "La Esquina Ronda." Tony had hoof soup and bull penis soup, I think. I'd have to be pretty soused to try a dish with penis in it, but you only live once, right? :)

Anyhow, I've never been the type to travel overseas and hang out at Applebee's and Hooters. I want to experience the country, the people, the food, and its culture.

Do any of you in the Quito area have any other recommendations for great local food? I'll get pretty adventurous. I want to try cuy, Ecuadoran ceviche, and the various types of soups. I love spicy food and will go as hot as they can make it. I'm interested in the Mom and Pop type restaurants rather than any high end, fancy places. When looking around the Net, most of the listings and reviews seem to be for the fancier restaurants.

I'll also be looking for some local bars to check out. Some place where locals hang out but are welcoming to extranjeros; where the drinks are reasonably priced; and a place where I won't get the "Gringo Special" when I get ready to pay my tab. :/
